When I feel the urge for a powerful dose of Persian food, I’d call Persepolis and ask, “Do you offer Gormah Sabzi today?” If the answer is yes, I’d immediately order it together with complimentary dill rice ($14 total). I dine there with friends sometimes, and the service is generous and impeccable. When the food arrives, I’d dish out the stew consisting of green herbs, kidney beans, and beef, and soak my tongue in the wonderful flavor before going for the dill rice. Meals there often bring back fond memories of my undergraduate life at Pomona College in California, because it was Dr. Shahriari, an Iranian mathematics professor, who took me out for lunch and introduced this dish to me.
